Black Bean and Corn Salad

 
   
   
   
Ingredients -  
   

1 1/2 cup Cooked Black Beans, drained and rinsed
2 cup Cooked Corn Kernels
1 Red Bell Pepper, fresh or roasted, chopped
3 Green Onions (spring onions), sliced
2 tablespoons minced Fresh Coriander (cilantro)
2 tablespoondiced canned Mild Green Chilies
1 tablespoon Olive Oil
2 tablespoons Red Wine Vinegar
1 1/2 tablespoons Lemon Juice
1/4 teaspoon Kosher Salt
1/8 teaspoon Crushed Red Pepper Flakes
1/2 teaspoon Ground Coriander
1/2 teaspoon Ground Cumin

 
   
Preparation:  
   

In a large bowl combine beans, corn, bell pepper, onions, coriander, and chilies. Whisk together remaining ingredients in a small bowl and stir the dressing into the salad.
