Apricot Chops

 
 
 
Ingredients -
 

1 tablespoon Olive oil
4 (1 inch thick) bone-in Pork Chops
Salt and Pepper, to taste
1 cup Apricot Jam
1 cup Catalina Salad Dressing
1 (1 ounce) package Dry Onion Soup Mix
1 Garlic clove, crushed

 
Preparation:
 

Preheat oven to 400 degrees F (200 degrees C).

Heat oil in frying pan over medium-high heat. Season pork chops with salt and pepper; cook 2 to 3 minutes per side until well-browned.

Stir jam, salad dressing, onion soup mix, and garlic together in a bowl until well-blended. Place chops in a 9x13 inch baking pan lined with foil, and cover with apricot mixture.

Bake in preheated oven approximately 40 minutes, until internal temperature has reached 160 degrees F (70 degrees C), or pork is no longer pink in the center.

 
 

Cajun Garlic Pork Roast

 
 
 
Ingredients -
 

1 (3-pound) boneless Pork Loin Roast
1 teaspoon Seasoned Salt
1 tablespoon Oregano Leaves
1 tablespoon Fresh Ground Black Pepper
1 Garlic clove, crushed
1/2 teaspoon Red Pepper Flakes
1 teaspoon Chili Powder
1 teaspoon Ground Cumin

 
Preparation:
 

Heat oven to 350 degrees F.

In small bowl, blend together well-seasoned salt, oregano, pepper, garlic, red pepper, chili powder and cumin. Rub seasoning on all surfaces of pork roast. Place pork in shallow roasting pan and roast until meat thermometer inserted reads 150-155 degrees F., about 1 to 1 1/2 hours.

Remove pork from oven; let rest 10 minutes before slicing.
Serves 6 with leftovers.

 
 

Mexicali Pork Chops

 
 
 
Ingredients -
 

4 thick Pork Chops
2 teaspoons Oregano
2 cloves Garlic, crushed
2 teaspoons Cumin
4 tablespoons Cider Vinegar
2 teaspoons Olive Oil
1 4-ounce can Green Chilies

 
Preparation:
 

Prepare marinade with ingredients in blender. Marinate chops in mixture 4 to 24 hours, refrigerate. Heat oil in skillet. Remove chops from marinade and pan broil 8 to 9 minutes in each side.
