Peel kiwifruit and cut into quarters. (The kiwifruit
skin is completely
edible. For added fiber and texture, simply wash and trim ends from
kiwifruit. Rub lightly to dry before cutting.) Cut chicken into sixteen
1-inch pieces. Core and quarter pepper; cut each quarter into 4 pieces.
Peel and quarter onion; cut each quarter into 4 pieces. Toss chicken,
peppers, and onions with Lime-Ginger Marinade; marinate 1 to 2 hours
in refrigerator. When ready to cook, toss kiwifruit and shrimp with
other ingredients to coat with marinade. Divide ingredients among 8
skewers.
Grill or broil, 3 to 4 minutes per side, turning skewers once, until
chicken and shrimp are cooked through.
For the marinade: Whisk all ingredients until well combined.
Pacific Rim Cole Slaw
Ingredients -
1/2 cup Rice Vinegar
1/2 cup Peanut Oil
1/3 cup Creamy Peanut Butter
2 1/2 tablespoons Soy Sauce
2 1/2 tablespoons packed Brown Sugar
2 tablespoons minced Fresh Ginger
1 tablespoon minced Fresh Garlic
1 pound package Cole Slaw Mix
15 ounce package Broccoli Slaw Mix
6 Green Onions, trimmed, sliced diagonally
1/2 cup chopped Fresh Cilantro
1/2 cup chopped Peanuts
Preparation:
Whisk together rice wine vinegar, oil, peanut butter,
soy sauce, brown sugar, ginger, and garlic; set aside.
In a large salad bowl, toss together slaw mixes, onions, cilantro,
and peanuts.
Pour prepared dressing into salad bowl and stir to coat.
Pacific Rim Fruit Salad
Ingredients -
1 Golden Ripe Papaya
green Kiwi Fruits
B ananas
1/2 Orange
1/2 Lemon
Preparation:
Peel and seed papaya, cut into cubes.
Place papaya in a large glass bowl.
Add sliced kiwis and bananas and mix well.
Squeeze orange and lemon together, stir into fruit mix.
Let stand at room temperature an hour or two, then refrigerate overnight
for best results.
