Turkey Tortilla Soup

 
   
   
   
Ingredients -  
   

3 pounds leftover Turkey
1/2 cup Olive Oil
4 cloves Garlic, crushed
1 Red Onion or Vidalia Onion, diced
dash Chili
dash Cumin
dash Oregano
1 large Red Pepper, diced
1 large Yellow Pepper, diced
2 or 3 Jalapenos, diced
1 can - 19 ounce Corn Niblets
1 can - 28 ounce Stewed Tomatoes
1 can - 28 ounce Herb and Garlic Tomato Sauce
1 can - 19 ounce Red Kidney Beans, drained and rinsed
1 can - 19 ounce Black Beans, drained and rinsed
1 can - 19 ounce Brown Beans with molasses
2 cups Salsa, mild or medium hot

 
   
Preparation:  
   

In a large saucepan, over medium heat, sauté onion in oil 3 - 4 minutes or until translucent. Stir in chilies and taco seasoning mix; cook 1 minute. Add tomatoes, breaking up with spoon. Stir in broth and bring to a boil. Add corn and turkey, reduce heat and simmer for 5 minutes. Add cilantro.

To serve:
spoon 1-1/3 cups (325 mL) of the soup in each bowl. Top each serving with 1 tbsp (15 mL) tortilla pieces and 1 tbsp (15 mL) cheese.
