Smoked Turkey and Couscous

 
   
   
   
Ingredients -  
   

1 (14 1/2 ounces) can of Chicken Broth
2 cups of Broccoli Florets
1 cup of cut up fully chopped Smoked Turkey
1 1/2 teaspoons of chopped Fresh Tarragon Leaves
1/2 cup of Uncooked Couscous
1/2 cup of shredded Low-Fat Cheddar Cheese

 
   
Preparation:  
   

Heat the broth to boiling in a 10 inch skillet. Stir in the broccoli, turkey, and tarragon. Cover and cook for 3 to 4 minutes or until the broccoli is crisp tender. Stir in couscous, remove from heat. Cover and let stand about 5 minutes or until liquid is absorbed. Fluff couscous mixture with fork. Sprinkle with cheese. Makes 4 servings
