1 small Onion, minced
4 tablespoons Butter
2 tablespoons Fresh Herbs, mixed (thyme, basil, marjoram, etc.)
1/2 to 1 teaspoon Salt
1/2 teaspoon Black Pepper
1/4 cup Italian Style Tomato Paste
1 cup Long Grain Rice
1 1/2 cups boiling Water or Chicken Broth
Preparation:
Saute onion in butter until softened; add seasonings,
tomato paste, rice and boiling water or broth. Bring to a boil, stir
once, cover, reduce heat and simmer 15 to 20 minutes, until tender.
Fluff with a fork and let sit 5 minutes. Serves 4.
