In a 3-1/2 qt slow cooker, combine potatoes,
sugar, margarine, coconut, pecans and cinnamon. Cover; cook on LOW
for 6 to 8 or on HIGH for 3 to 4 hours.
Stir in coconut flavoring and vanilla. Sprinkle with toasted coconut
if desired.
And of course, there's alwasy the classic sweet potato casserole
with marshmallows. I like to add a small can of pineapple tidbits
with juice to the mashed sweet potatoes while mashing with the butter,
salt and cinnamon.
