Place roast in roasting pan Combine garlic, pepper,
rosemary and salt in a bowl. Add just enough olive oil to allow mixture
to be rubbed on roast. Rub evenly all over roast. Place in preheated
oven at 350°. Roast to 160°. [approximately 1 to 2 hours for
for a large roast] Let stand 20 minutes before carving.
