Crunchy Peach Cobbler

 
   
   
   
Ingredients -  
   

1 Pastry for double crust pie
5 cups sliced Peaches
1 cup Sugar
1/4 cup Water
3 tablespoons Flour
1/4 cup Sugar
1/8 teaspoon Salt
Butter

 
   
Preparation:  
   

Roll half the pastry very thin and line a 2" deep baking dish. Roll and cut the other half into strips.

Spread half of the strips on a cookie sheet. Bake the strips at 375 degees until brown, about 10 minutes. Set aside.

Put peach slices, 1 cup sugar, and water in a saucepan; cook until fruit is soft.

Mix flour, sugar and salt; add to fruit. Cook, stirring, until slightly thick. Stir in cooked pastry strips. Spoon into the crust-lined dish; dot with butter and cover with uncooked strips.

Bake at 400 degrees until brown, about 30 minutes.
