Apricot Cake

 
   
   
   
Ingredients -  
   

1 (8 ounces) Cream Cheese, softened
1/4 pound Butter
1 1/4 cups Sugar
1 teaspoon Vanilla
2 cups Flour
1 teaspoon Baking Powder
1 teaspoon Baking Soda
1/4 teaspoon Salt
1/4 cup Milk
1 (12 ounces) jar Apricot Preserves

 
   
Preparation:  
   

Preheat oven to 350º

Cream together to the cream cheese, butter and sugar until light and fluffy.

Beat in eggs; one at a time, mixing well after each addition; beat in vanilla.

Sift together flour, baking powder, baking soda and salt.

Stir flour mixxture into the batter, alternating with the milk.

Pour half of the batter into a well greased baking pan, spread the apricot preserves over batter and top with remaining batter.

Bake for about 45 minutes or until a toothpick comes out clean.
