Tasty Parmesan Tidbits

 
   
   
   
Ingredients -  
   

3/4 cup finely chopped Onion
2 tablespoons Butter
6 Eggs
2 packages (10 ounces each) Frozen, Chopped Spinach, cooked and drained
1 pkg. (6 ounces) Herb-Seasoned Stuffing Mix
1 1/2 cups grated Parmesan Cheese
1 can (8 ounces) Tomato Sauce

 
   
Preparation:  
   

Sauté onion in butter until tender. In large bowl, beat eggs. Stir in onion, spinach, stuffing mix, and 1/2 cup cheese. Form into 1-inch balls. Roll in remaining cheese. * Place on greased baking sheet. Bake in preheated 350°F oven until golden brown, 12 to 15 minutes. Heat tomato sauce to serving temperature and serve with tidbits.
