1 package Active Dry Yeast
3/4 cup warm Water
2 tablespoons Sugar
1 teaspoon salt
3 cup Flour
4 Eggs
1/2 cup Soft Butter
1 cup grated Parmesan Cheese
1 cup shredded Monterey Jack Cheese
1/2 teaspoons Oregano

Preparation:

In a bowl pour in the warm water and sprinkle the yeast on top. Allow to stand for 5-8 minutes or till foamy. Add the sugar, salt and 1 cup of flour. Mix well. Add in the eggs one at a time. Mix till smooth. Add in the butter. Gradually add enough remaining flour to make the dough soft and elastic. Turn out onto a lightly floured surface and knead for 8 minutes. Place dough into a greased bowl and cover with a damp cloth till double in size. Pour dough out onto a lightly floured surface again and knead for a minute or two. Roll out the dough into an 10 - 14 inches. In a bowl beat remaining egg and add the cheeses and oregano. Spread cheese filling on the dough. Roll up the dough like a jelly roll. Shape into a round by folding the ends underneath. Place into a greased 2 quart round baking dish. (such as a souffle dish). Cover with damp cloth and allow to rise for 50 minutes till double. Bake in a preheated 350 degree oven for 40 minutes. Remove from dish and cool on a wire rack.
