French Onion Bread

 
   
   
   
Ingredients -  
   

3 3/4 warm Water (110F)
pinch of Sugar
1 1/2 packages Active Dry Yeast
1 cup of Sourdough Starter
2 teaspoons Salt
1/2 teaspoon Fresh Ground Black Pepper
A good pinch of ground Cardamon
4 medium Onions
2 tablespoons Butter

 
   
Preparation:  
   

In a bowl stir in pinch of sugar and sprinkle with yeast. Let stand for 5 minutes. In a large bowl add 1/2 the flour. Add in the yeast mixture and sourdough starter combine to make a dough. On a floured surface, knead dough until smooth. Cover and place in a warnm place overnight. In the morning, mix salt, pepper, cardamom and remaining flour into the dough. Knead for 5 minutes. Peel and finely chop the onions. In a saucepan melt the butter and add half the onions, cook till slightly brown. Drain well; knead cooked onions into the dough with remaining raw onions. Place some parchment paper on a cookiesheet. Shape dough into 3 loaves about 14 inches long. Cover and let stand in a warm place for 15 minutes. Preheat oven to 450F. Brush loaves with water and sprinkle with a little additional flour. Using a sharp knife make several cuts across the tops. Bake for 30 minutes. Cool on a rack.
