Spicy Couscous Pita

 
   
   
   
Ingredients -  
   

1 Whole Wheat Pita
1/2 cup Couscous
1-2 slices of your favourite Vegan Soy Cheese
1/2 small Onion, chopped
2-3 tablespoon Medium or Hot Taco Sauce
1 (generous) dash Cumin
1 dash Cayenne OR Chili Powder
1/2 teaspoon Garlic Powder
1 teaspoon Nutritional Yeast (entirely optional)
Salt and Pepper, to taste
Oil

Preparation:  
   

Add a bit of oil to a pot of water (enough to prepare 1/2 cup couscous) and bring to a boil. Add couscous, stirring. Boil for a few seconds, until couscous is tender, then remove from heat.

Mix in onion, taco sauce, cumin, cayenne/chili powder, garlic powder, nutritional yeast, and salt and pepper if desired.

Cut pita to open pockets without slicing all the way through the entire thing. Stuff the couscous mixture into both sides (its going to be pretty packed!). Slice soy cheese lengthwise and place on either side of the pitas opening.

Toast the pita in an oven or toaster oven until soy cheese is melted. Fold it over; the soy cheese should make it stay that way without falling apart!

Enjoy. Its easy, hearty, and pretty filling.

Options: adjust spices to make it more or less spicy and add tomatoes, peppers ... or anything, really!
