1 1/2 pounds Tomatoes, ripe, peeled
3 cloves Garlic
1 Onion
1 Carrot
1 small Cucumber
1 Green Bell Pepper, seeded and quartered
2 sprigs Parsley
4 tablespoons chopped Fresh Basil
Juice of 1 or 2 Lemons
Salt and Pepper, to taste
4 cups V-8 Juice
Preparation:
Combine all ingredients in a blender or food processor.
Chill several hours before serving. Adjust seasonings to taste. Can
be served hot or cold.
Easy to prepare and great for hot summer nights.
