Classic Chicken And Fruit Salad

 
   
   
   
Ingredients -  
   

2 cup cooked Boneless Chicken
4 cup torn assorted Lettuce
1 cup Mandarin Orange segments
1 cup Fresh Strawberries
1/2 cup Currants
1/2 cup cubed Cheddar Cheese
4 talespoons Butter, softened
1 tablespoon Cinnamon

 
   
Preparation:  
   

Melt the margarine in a skillet and saute currants and cinnamon for about 5 minutes. Cube the chicken and cheese if you have not alreadydone so. Drain the mandarin oranges and slice the strawberries. Place all ingredients in a glass bowl and toss with the following:


Dressing:
1/4 cup Salad Oil
1/4 cup Apple Cider Vinegar
2 tablespoons minced Dried Onion
3 tablespoons Sugar
shake the dressing well

If you are not planning to serve this salad immediately, keep the ingredients separated and assemble just before serving.

Serve with fresh rolls and your favorite beverage.
