Rinse rice in cold water, drain well. Cook over
medium heat in olive oil until brown stirring constantly. When rice
nearly browned add minced onion and saute with rice. Stir in tomatoes,
add broth, liquid from canned tomatoes, cumin, salt and pepper. Bring
to boil. Lower heat to medium and simmer 20 minutes or until rice
is tender and has absorbed liquid.
