Boil the fish in water for 30 minutes and cool.
Bone and skin it and chop fine. Add anchovies, parsley, pepper, cheese,
bread and 2 eggs and mix very well. "Shape into 2-inch log-shaped
croquettes", roll in flour, dip in the remaining egg, roll in
bread crumbs, and fryed in olive oil until brown all over.
Frying time is about 4 minutes each side.
Makes 10-12 croquettes.
