1 large Onion, chopped
1 medium Bell Pepper, chopped
1 teaspoon Curry Powder
1 teaspoon Salt
1 teaspoon Pepper
3 tablespoons Olive Oil
1 can Tomatoes, chopped
3 cups Kidney Beans
2 cups Coconut Milk
3 cups Water
1 cup Cooked Rice
Preparation:
Saute onion, peppers, curry powder, salt, and pepper
in oil for 5 minutes. Add tomatoes and simmer for 10 minutes. Add beans,
coconut milk, and water. Simmer for 5 minutes. Add rice, stir well and
serve.
