Baked Red Snapper

 
   
   
   
Ingredients -  
   

2 pounds Red Snapper Fillets
Salt And Pepper, to taste
2 tablespoons Olive Oil
2 large Purple Onions, sliced
1 large Red Bell Pepper, roasted and diced
1 clove Garlic, minced
1 can Tomatoes, diced
3 tablespoons Parsley, chopped
4 large Basil Leaves, shredded
1 Lemon Juice

 
   
Preparation:  
   
Preheat oven to 400*. Season fish with salt and pepper, set aside.
Saute onions in oil, 10 minutes. Add peppers, 5 minutes. Add garlic and toamtoes, cover and cook 5 minutes. Stir in parsley & basil, keep warm over low heat. Brush fish with olive oil, place in single layer in baking dish. Bake 12 minutes. To serve, cover fish with sauce and garnish with leomn juice and serve.
