Ingredients -  
   

1 cup Couscous Semolina
1 cup Fresh Italian (flat-leaf) Parsley, minced
1 cup Fresh Mint Leaves, minced
4 Tomatoes, peeled and chopped
1 Onion, chopped
1/4 cup Fresh Lemon Juice
1/4 cup Extra-Virgin Olive Oil

Preparation:  
   
In a large bowl, mix the couscous semolina with 2 cups of cold water and let it rest at room temperature for half an hour; all the water should be absorbed. In another bowl, mix the herbs, tomatoes, onion, lemon juice and olive oil. Taste and add salt as desired. Fluff the couscous with a fork to separate the grains; then add the tomato-onion mixture and combine. Check seasoning. Cover with plastic film and chill for 1 to 4 hours. Check seasoning again, adding salt and lemon juice if necessary.
