Wonton Soup

 
   
   
   
Ingredients -  
   
3 dried Chinese or Shiitake Mushrooms
4 ounces Ground Pork
2 ounces raw Shrimp Meat, finely chopped
1/2 teaspoon Salt
2 teaspoons Soy Sauce
1 teaspoon Sesame Oil
1 Green Onion, finely chopped
1 teaspoon Grated Ginger
1 tablespoon finely chopped Water Chestnuts
24 Wonton Wrappers
5 cups Chicken Stock
4 Green Onions, very finely sliced, for garnish
 
   
Preparation:  
   
Place mushrooms in small bowl; cover with hot water, leave to soak 30 minutes. Drain, squeeze out excess liquid. Remove stems, chop caps finely. Thoroughly combine mushrooms, pork, shrimp meat, salt, soy, sesame oil. green onion, ginger and water chestnuts.

Using one wrapper at a time (cover remainder with clean, damp kitchen towel). place a level teaspoonful of mixture on each wrapper.

Moisten edges of wrapper, bring sides up to form a pouch. Place on a plate dusted with flour. Cook in batches in large pan of rapidly boiling water 4-5 minutes: remove, drain. Boil stock in another pan. Place won tons in bowls. garnish with green onions, pour in hot stock. Serve.
