Green Plantain Chips |

Vegetable Oil
1 large, Green plantain (about 1 pound)
Salt, optional

| Preparation: |

|
Fill a deep fryer or Dutch oven with vegetable oil,
about 2 to 3 inches. Heat oil at 375 degrees. Remove skin from plantain
and cut off the fibrous strings. Slice the plantain into paper thin
rounds. Deep fry plantain slices, a dozen at a time until golden brown
on both sides, about 3 to 4 minutes. Drain on paper towel. Sprinkle
with salt and serve chips warm or at room temperature.
