Tofu With Black Bean Sauce

 
   
   
   
Ingredients -  
   
2 tablespoons Canola Oil
3 cloves Garlic, crushed
1 teaspoon finely Grated Ginger
2 tablespoons salted Black Beans (Chinese style)
1 small Leek stalk, thinly sliced
1 fresh Red Cayenne Pepper, sliced
1 package Firm Tofu (16 ounces), drained, cubed
1 tablespoon Soy Sauce
1 tablespoon Cornstarch, dissolved in a 1/4 cup of cold water
1 tablespoon Sesame Oil
4 Green Onions, chopped
1/4 cup fresh Coriander leaves, chopped
 
   
Preparation:  
   
Heat the oil in a wok and saute the garlic, ginger and salted black beans for 1 minute. Add the leek, cayenne pepper, tofu, soy sauce, and cornstarch mixture. Stir and simmer for 3 minutes. Sprinkle with the sesame oil. Garnish with the green onions and coriander leaves.
