Fried Rice

 
   
   
   
Ingredients -  
   
1 tablespoon vegetable oil
2 Chinese sweet pork sausages, quartered lengthwise and diced (or any leftover meat)
1 scallion, root end and tough green tops removed, thinly sliced into rounds
8 large napa cabbage leaves or any Asian greens, thinly sliced
4 cups cooked long-grain rice, refrigerated overnight
1 large egg
2 tablespoons soy sauce
freshly ground black pepper
 
   
Preparation:  
   
Heat the oil in a wok or large nonstick skillet over high heat. Add the sausages, scallion, and cabbage and stir-fry until the sausages render their fat, 3 to 5 minutes. Add the rice and continue to stir-fry and mix all the ingredients evenly. Add the egg and stir-fry quickly until the rice dries out completely, about 10 minutes. Add soy sauce and season to taste with black pepper. Stir-fry an additional 5 minutes and serve.
