Crispy Fried Tofu |

1/2 pound Tofu
1/4 cup Rice Flour
2 tablespoons Cornstarch
5 cups Peanut Oil for deep-frying
Spring Roll Sauce
Satay Sauce
Lettuce Leaves
Cucumber Slices

| Preparation: |

Cut tofu into strips 2x1x1/4 inches. Combine rice
flour and cornstarch. Preheat oil for deep-frying on medium heat. Coat
tofu with rice flour mixture. Deep-fry for 7 to 10 minutes, or until
golden brown. Drain on absorbent paper towels. Serve with spring roll
sauce, satay sauce, lettuce leaves and cucumber slices. |
